The holidays are over and if you’re anything like me you are trying to battle the holiday bulge. Wean yourself off the holiday treats as it’s now 2015 and the bad food bender needs to be a thing of the past. Lucky for you, I have a recipe that’s not going to make you cut cold turkey, and I promise won’t taste like turkey either, as I’m sure you don’t even want to hear the word turkey… whoops, I said it again. This is a recipe that I have modified, from a family favourite, to one we love even more. It tastes like it’s bad for you, but is healthier than most Christmas treats.
Ingredients:
2 cups natural peanut butter
2 cups raw sugar
½ cup of Grass fed cow or goat butter
4 cups oats
1 225g bag dark, refined sugar free, chocolate
3 tsp coconut oil
Instructions:
In a food processor add the raw sugar and blend until it becomes fine and powder-like. Next add the butter and peanut butter and blend. Place the peanut butter mixture into a large bowl and add the oats, mix together. Line a cookie sheet with wax paper. Roll small walnut sized balls and place them on the cookie sheet. Melt chocolate and coconut oil in a double broiler. Dip balls in the chocolate then place back on the cookie sheet. Place in a cool area but do not freeze.
